Andrew sourced the fruit for Aquarius from prime-sited vineyards in Victoria, which The World Atlas of Wine calls “the most interesting, the most dynamic and certainly the most varied of Australia’s wine states.” It marries two stars from France’s Rhône Valley, Marsanne (70%) and Viognier (30%), both of which reach unparalleled ripeness in the brilliant Australian sunshine.
