Viansa Winery fermented their Pinot Noir grapes for two weeks in small open-top stainless steel, before aging in mostly French oak barrels for 11 months. The resulting wine is ethereal, almost feminine, with hints of delicate sweet cherry. Taste the acidity and sweet tannins, and be prepared for a long and authoritative finish that bursts of black cherry. Try it with crispy duck, salmon, even a grilled cheese sandwich. Enjoy now or cellar up to 3 years.
