Their cooling influence helps keep grapes fresh and encourages the skins to thicken, which yields friendly tannins and structure in the wine. Hal really had his pick of premium Cab during the exceptional 2015 vintage – one of the best in recent memory, with hot, sunny days that yielded intensely ripe and concentrated fruit.
Look forward to expressive aromas of blackberry, plum and blueberry. The flavors follow on, with layers of dark fruit and subtle spice, thanks to a 10-month slumber in fine American and French barrels. Ripe and succulent, it’s a delicious match for hearty stews or beef dishes.
