Bill Knuttel is a big name in Sonoma wine. Among his other accomplishments, he spent decades as the creative genius at famous estates Saintsbury and Chalk Hill, and has served as president of the California Cabernet Society. Now, Bill’s struck out on his own, and this exclusive new Sauvignon Blanc is a lovely taste of his talents.
Inspired by Kore (the Greek goddess of spring, whose name means ‘beauty’), it hails from Sonoma’s premium Dry Creek Valley. According to Master of Wine Jancis Robinson, “Sauvignon Blanc stands head and shoulders above” the other white grape varieties here. And thanks to the great 2016 vintage, this super-refreshing Sauvignon Blanc really shines.
Bill chose to cool ferment the wine to lock in all the pure fruit character. Look forward to vibrant, citrus- and tropical-fruit aromas, with hints of fresh-cut herbs. The same flavors grace the palate, which displays a juicy acidity and long, mouthwatering finish.
Serve chilled on its own, or pair with anything from seafood to mildly spicy Asian cuisine. Just one caveat – like all the wines we get from Bill, this ‘beautiful’ Sauvignon is from a small batch. Order quickly to avoid missing out.
